  1. chop vegetables
  2. put in mason jar
  3. place currant leaf on top
  4. place ferment weight on leaf
  5. cover with brine
  6. fill airlock with water and screw lid on jar

You can chop vegetables into bite-size pieces to make finger food, or chop it in very small pieces to make a fermented relish-like condiment.
