  1. chop carrots into bite-sized pieces
  2. peel and slice ginger root into thin slices
  3. place carrots and ginger in canning jar
  4. cover with brine
  5. seal

Notes

The carrots are not organic. I think they came from a grocery in the International District/Chinatown.

Meta

The original version of this recipe does not match the photo. Either I got the date of the ferment wrong or I failed to enter both recipes in the first place. If the date is wrong, then the other version can be ignored as a phantom recipe. If I failed to enter the original recipe, then the other version is legit, but has no photo.

In either case, I copied what was here into the other page, and modified this recipe to match, as closely as I could, the photo.
